GELLAN 젤란

It is a material that is very heat resistant to heat. It becomes a jelly that does not melt completely 
in heat with calcium. Calcium must be added after boiling. By combining ions, it can form jelly that does not melt in heat. Presence of sodium and in particular calcium inhibits proper hydration.
Addition of a sequestrantsuch as sodium citrate binds calcium and helps hydration
